Quick 'n Super Easy Chicken Recipe

Whenever I make chicken, my hubby gets really impateint by the time its ready. He wanted something quick and thats when I got this recipe from my Dad! Yepp, my Dad. The only time he gets in the kitchen is to cook chicken:) Thats the only dish he has mastered apart from 'fish'!

This recipe needs minimum ingredients and can be made in a jiffy. And its really yumm! Dunno what to call it though... lemme know if you can think of a good name for it :)

Herez what you will need:
Canola Oil/Butter
Ginger-garlic paste
Black pepper
Salt
Red chilli pepper
1 tsp lemon juice
4Pc Chicken Drumsticks

Serves: 2
Approx cooking time: 30mins

Mix ginger garlic paste, lemon juice, salt and red chilli pepper. Rub this paste on the Chicken drumsticks and let it sit for 10 mins.(I sometime prick the chicken a little with a fork so that the spices seep in)

Heat oil/butter in a heavy bottomed Pan(non-stick) on medium heat. Add ginger-garlic paste, salt and some blackpepper to it. Stir for a minute and then add the marinated chicken peices. Cover the pan.

After every 5 minutes, turn the chicken peices so that they get equally brown on all side. The chicken is ready when its golden brown and soft enough to cut with a spoon.

Methi Dal

Time: 15-30 mins |

Ingredients:
1 cup - methi leaves, chopped
1 cup - toor (red gram) dal
½ cup - onion, chopped
1 piece - cinnamon
2 - cardamom
1 tsp - ginger, minced
1 tsp - garlic, minced
1 tsp - chili powder
½ tsp - turmeric powder
1 tsp - coriander powder
dry mango powder (aam choor) to taste
salt to taste
2 - cloves
2 tbsp - oil


Method:

  1. Cook dal with enough water till very soft and mash well. (Consistency should be of thick cream)
  2. Heat the oil in a kadai. Add cloves, cinnamon and cardamom.
  3. After few seconds, add onion, ginger and garlic. Fry till onion is brown.
  4. Mix all the powders with little water to a paste and add. Fry for 2 minutes.
  5. Add methi leaves and fry well.
  6. Add the cooked dal and salt. Simmer for 2 minutes.
  7. Add aam choor, mix well and remove from fire.
  8. Serve hot with chapathi or steamed rice.

Serves:4 to 6
